Gestalt was born in 2012, based in the Adelaide Hills, the label has grown organically each year in the search for quality vines from the Hills, Barossa Valley, and Clare regions.
The winemaking philosophy is based on how to most lightly handle premium fruit to realise the greatest balance and complexity in the finished drink. To do this all grapes are hand-harvested from carefully selected, small-scale vineyards using organic practices to maintain healthy vines and soils. When the fruits of this labor get to the winery in pristine condition, most of the work is already done. To retain the freshness, intensity, and structure which rewards this approach, they use natural ferments and minimal intervention all the way to bottling. The wines are transferred by gravity post-fermentation, and are typically left unfined and unfiltered.
